Raw Food Diet – Day 3


Today I woke up unusually early around 4:30 am. I wasn’t hungry or uncomfortable I tried to go back to sleep but finally gave up after fifteen minutes. I think around 5:00 am is the best time for meditation. I used to get up at this hour to mediate but hadn’t done it in a while. It was really quiet and I meditated for forty five minutes, it is the longest I have ever meditated. After that made my self some ginger tea and did a bit of reading, bliss! Spending some time by myself was so wonderful. I love my family but sometimes it is nice to have some alone time. Also watching the sun rise is an experience in itself no matter how many times you have done it.

Breakfast – 8:00 am

Fruit salad (bananas, strawberries, pineapple & apple), just chopped the fruits in a bowl with some lemon juice, simple but delicious!

Snack – 11:00 am

Half cup of mixed nuts.

Lunch – 1:30 pm

I found an egg plant in the fridge and wondered if it could be eaten raw. Usually I fry it and top it up with spices and yogurt. I checked the internet and found a recipe for a raw eggplant salad. I already had all the ingredients except for the avocados which were easy to get from the shops across the street. The recipe is as follows:

•1 Large Eggplant

• 2 or 3 Ripe-But-Firm Ripe Avocados

• 2 garlic cloves, chopped finely

• 1/2 Red Onion, chopped finely

• Juice of 3 Lemons

• 4 Tbsp. live Oil

• Pepper to Taste

• 2 Tsp. Honey

1. Pare and dice eggplant. Place in a deep bowl and immediately cover with cold water with juice of 1 lemon.

2. Whisk together: oil, garlic, pepper and juice of 1 lemon. Set aside.

3. Peel and dice avocados. Place in bowl and toss immediately with juice of 1 lemon.

4. Drain eggplant and combine with avocados. Add chopped onion.

5. Whisk dressing again and add to mixture. Toss gently.

6. Set aside for about 15 minutes. Chill if desired.

7. Before serving, toss gently again and sprinkle with honey.

It was enough to serve about four people. Maybe I will have it for dinner too.

4:00 pm

Time for exercise but talked with a friend and got inspired to write an article which I will probably post tomorrow.

6:00 pm – Snack

An apple and some plums.

8:00 pm – Dinner

Thought about having lunch leftovers for dinner but since it is the last day of raw food decided to make something fresh. I had bought a lot of spinach yesterday so aspinach salad sounded good. I rinsed and torn the spinach into bite size pieces, tossed in some strawberries, grated carrot and walnuts. I dressed it up with olive oil, half tea spoon of sugar and paprika. Very nutritious and tasty.

Today my water intake was about seven glasses.

This concluded my three day journey of going raw. Tomorrow we are going out to dinner to celebrate it and also Ahmed’s birthday. Maybe I will continue to have my salads till then as I have a lot of leftovers. I am planning to order a big dessert tomorrow, I think I deserve it!
